delicious and easy to make, bliss balls in all their variations are a yummy snack, and have some nutrition in the coconut and tahini especially which is always a bonus when making family treats! and no added sugar…
here is one of my simplest versions…

ingredients
flesh from one brown coconut (thick white harder flesh)
grate or pulse to fine consistency in food processor
1/2 c almond meal or other nut meal, cashew is good
3 tbsp hulled tahini
250g pitted dates
rehydrate with 1/4 c hot water and mash to paste
1/2 c mixed sunflower seeds and pepitas
optional tspn cinnamon powder or cacao powder
mix til smooth and good consistency to roll into small balls (i vary from marble to lime sized)
roll in dessicated coconut and keep refridgerated when not being munched!!

Could I use organic coconut that comes in a jar or does it need to be fresh???

You could definitely use dried coconut in lieu of fresh coconut. Perhaps use a little more date paste to keep them moist as the dry coconut (desiccated) will absorb some of the moisture. Good luck and trust your intuition on the moisture content:)
