Charlotte’s flavorsome coconut saucy sauce for baking chicken, fish or veg in

chop finely with a food processor

1inch knob of peeled ginger

2 cloves garlic

2 shallots

handful of coriander

then add in

1 tbs sesame oil

1 tbs fish sauce

2 tbs soy sauce

1 tin coconut cream

-pour over chicken peices or vegetables in a baking dish and cook for 45 minutes

-mmmmmm yum

Hi lovely sister and family thought you would like to try this for a rainy day breaky or lunch
Baked egg Delight

you will want
1 Chorizo sausage or similar sliced
1 onion
4 cloves of garlic (less or more dependant on your garlicability)
1 bay leaf
oregano or any herb and as much as you like, I used a small handful of parsley today
50g fetta for tradition or any cheese you have, brie goes all gooey yummmy

50ml red wine vinegar (you need something vinegary to combat the tomato)
4 tbsp tomato paste
1 can tomatos or equal amount fresh chopped
2 cans cannellini beans or similar
4 eggs (prob can use up to 6)

Fry chorizo onion, garlic and bay leaf in a fair bit of olive oil till done to your satisfaction
Add the vinegar and nlet bubble for a minuet then add tomato’s, tomato paste and beans. For extra flavour depth you could try a table spoon of molasses as well.
Cook for about 5 min then add herbs.
Make little wells and put an egg in each.
Top with cheese and a good drizzel of oil.
You can bake in the oven uncovered or in the frypan with a lid on until eggs are cooked. About 8 to 10 min in oven.
Serve with toast
