easy beet dip

Easy Beet Dip

you will need

at least 3 beetroots

2 cloves garlic

dab of butter

ground cummin

ground coriander

salt

pepper

a stick blender or food processsor

an oven

preheat your oven

peel and cut your beets into 2cm cubes

pop into an oven dish with a lid {or improvise with a foil package}

add in the peeled garlic and the butter

seal and bake for about an hour on 180c or until a fork can easily go through the beet

let cool

place all into blender and pulse until smooth

season with spices and s&p

drizzle with a good olive oil

we will be having this dip with vegi sticks, fresh sourdough bread and corn chips this afternoon when the grandparents arrive

and Lily is back from school…

Bircher Muesli Recipe and story

when i was a small girl

we lived in the West Australian wheatbelt

summer days frequently kissing blue skies and 40~celcius

after school the seemingly endless burnt orange gravel drive

shimmered and baked me

chasing after bigger faster sisters on bicycles

anxious in the hot vast expanse of golden crisped paddocks

i don’t remember a single tree on that km stretch to the house paddock

was there shade along the way?

and then i was there

pushing through the small side gate

often teary often late

there was our sturdy brick home with deep shaded verandahs

and my calm mama waiting in the cool dim kitchen with

hugs cheerfulness and

bircher muesli

sweet tart chilled textured cooling surprising delicious

was it so tasty because it was made with genuine swiss hands

and the apple grated with an authentic swiss bircher grater {so i call it}

what secret ingredient did you infuse this refreshing meal with mama?

mine never meets the reputation of my memory

so here i am now

on a meltingly hot day

waiting for my little to come dancing into home again after a long week

and i make bircher muesli

and think of cool kitchens and dark, even cooler pantries

{where i used to sneak crunches of dried pasta or other goods and lat on the cold floor

or draw on the back of door chalkboard}

now i think of

mama love

growing up

sour apples and yoghurt

i am blessed to be using yoghurt from the cows milk provided by yonder dexters

which forms a coveted cream top

there is an abundance of Bircher Muesli recipes out there in the world

i wouldn’t say mine is traditional as my bircher grater is still in storage and i chopped the apple instead…

you know i’m kidding right?

so I won’t do more than list the ingredients i used this particular time

2 handfuls organic unstabilised rolled oats

2 oranges squeezed over oats fresh from orchard

2 cups natural yoghurt from neighbours cows

1 handful dessicated coconut

2 tablespoons unhulled tahini

2 tablespoons maple syrup

2 tablespoons sesame seeds

1 small handful raisins

1 handful chopped almonds

1 tspn cinnamon powder

1 green apple from farmers market

1 green pear

1 banana from big market

1 handful blueberries

1 handful wild rasberries picked by a neighbour

mix and refridgerate

be inventive be flexible use what you have

the idea is softened oats yoghurt and fruit

i tend to soak the dry goods in the orange juice for a while before i add the yoghurt and fruit section

some people soak the oats overnight in the fruit juice til morn

for me that becomes a super digestible breakfast but kind of slimy and sticky, what do you think?

i forgot to add chia seeds, that might be nice

my mama used to put in stone fruits and grapes in later summer

and i hear tell she used some condensed milk to sweeten it…

is that true? did i forget any other special ingredient mamala?

delicious and easy to make, bliss balls in all their variations are a yummy snack, and have some nutrition in the coconut and tahini especially which is always a bonus when making family treats! and no added sugar…

here is one of my simplest versions…

ingredients

flesh from one brown coconut (thick white harder flesh)

grate or pulse to fine consistency in food processor

1/2 c almond meal or other nut meal, cashew is good

3 tbsp hulled tahini

250g pitted dates

rehydrate with 1/4 c hot water and mash to paste

1/2 c mixed sunflower seeds and pepitas

optional tspn cinnamon powder or cacao powder

mix til smooth and good consistency to roll into small balls (i vary from marble to lime sized)

roll in dessicated coconut and keep refridgerated when not being munched!!

Fresh Coconut Cream Curry

I have learnt the art of making fresh coconut cream and my goodness it tastes absolutely scrumptious!
Have you ever had it from anything but a can?
It’s abit of simple labour but definitely worth it.

For those of you who can get brown coconuts give it a go! you may just want to add the cream to your cuppa, cereal, cooking or guzzle it pure!
The rest of you… Well enjoy in theory!

Find a nice brown coconut or two full of water…

 

To break it in half over a bowl neatly, whack it around its belly with the back of a heavy knife or machete til it cracks and spills.
Now put the juice aside and grate the flesh with a coconut grater into another bowl
See the round pointed blade attached to a board you sit on below…

 

 

Return some liquid to the grated coconut, perhaps strain it. Stir through, it will go white and milky. Magic! Taste it with a mouthful of the flesh, mmm
Set aside again…

 

Now prepare your curry…
I used local onion and garlic and a friends grown ginger, chopped with my 18th birthday chefs knife (from my family in monogrammed leather sheath…)
Softened in My own made ghee! ( clarified butter)
Stirred with a locally made spoon and in the magic black pot

 
Measure out ones spices, I used coriander, cumin and turmeric into another locally made spoon…


I aromatise the ginger onion garlic mix for several minutes with the spices then add diced tofu


Turn off the heat and have some muslin or net curtain or some such at hand to squeeze your nut milk through into the pot… Can be messy but fun or make more dishes and squeeze into another bowl first, let your child help!

 


Looking good yet?
Add chopped veg of choice and adjust liquid and seasoning


Simmer til tender
Serve up with rice and yoghurt, chutneys etc…

I’ve been thinking a lot about my Swiss grandmas banana chicken curry which I haven’t had since childhood. I thought it was a peculiar mix then, but now I’d like to try it again!

We’ve been missing Sunday pancakes as we are always having an early start to markets on Sundays.

Waking up to…

Mango trees and a squawking corella

The prospect of new friendship with the kind Karen

And Sunday pancakes with home grown mango ice cream!!

I cherish this ritual of pancakes on most Sundays, it’s a slow morning’s work and definately

disappears quickly! At home we set the table with vintage linens, napkins Lily sewed for us

and nice crockery and create this special atmosphere…

it is usually a delightful time of togetherness, story telling and planning.

Sunday is a great morning to visit us!

as soon as I get out the flour bag and the big bowl Cedar knows what is going on

and gets ready to stir for mama

Cedar is accomplished at mixing our pancake batter now

This was our first pancake day on this trip as I’d felt too stretched to go beyond porridge last week…

a new innovation the girls cam up with, with some success…

This last Sunday we were invited to the home of Karen and her children, whom we had serendipitously met on the

Saturday at Rockhampton Botanic Gardens.

It is always a joy for me to connect with people who  invite us to their homes

and give us a glimpse of other ways of living.

I am so grateful for their generous spontaneity

(and luxury of a hot shower)

The mutual exchange and inspiration usually leaves both parties refreshed.

Karen really inspired me with her passion for good wholesome eating, self sufficiency,

sprouting, green smoothies and home schooling.

I have stepped up my game this last week and included green smoothies into my mornings.

In honesty I need to refine the taste!

Am blessed with a great bootfull of coconuts now so that helps!

When we visit others

I enjoy the closeness of walls and the convenience of water on tap, furniture and ease of space,

socializing and stimulation, bookshelves and instruments

and then I love going out to my cosy home in their garden and seeing the stars

and each night I remember how much I love this life

how much I appreciate the simplicity of our days.

The gift of the night sky moves me and I feel connected to the greater…

Lily, Gracie and Sophie took over the cooking with more creativity!

Cookie cut pancakes, fresh fruits, organic maple syrup and home made pure mango ice-cream! Decadance!

Sunday Pancakes

1 cup flour per 3 people (I use unbleached white spelt flour from Kombu)

1 egg

¾ c milk (I like Cleopatra’s Bath milk)

Pop your flour into a wide bowl and make a well,

Crack in your egg and blend with a fork, slowly allow the flour to be picked up by

Your egg mix

Slowly pour in your milk until you get a thick runny mixture (adjust milk as needed)

(you probably already know all this but there you go!)

I have a little cast iron pan in which I cook the pancakes in a little olive oil one at a time, a slow meditation for Sunday morns…

Market Chef kitchen which has two teams of youth creating

A dish demonstrated by a guest chef. Lily and I sat for the hour talking food…

Last night I was dreaming of salsa fish tacos

And today’s recipe was salsa seafood tacos!

I was in, I love to make things, I enjoy tasty treats

Davidson Plums are remarkably tart and beautifully blue purple

they polish up  like apples

they are sour little treasures which drop from high umbrella like trees

so, with a hundred million other  things to do

i thought a batch of sweetness from home to take with us

would be simple

surely i just slice plums and simmer them with some sugar…

it wasn’t simple

it wasn’t quick

it was messy and sticky and I was quickly left alone with the task

and then i remembered i needed sterile jars

and then luckily my mama called me up

and  reassured me my watery plum soup will thicken eventually if i just boil and boil…

oh hilarious, spontaneous and eventually rather soothing

as it brought me into the moment

tasting and stirring and breathing

away from the skitter skattery chaos of condensing our lives to fit

into a 7×2 metre home on wheels

my three tiny jars of treasure are delicious and jammy

and remind me to take a breath amidst it all.
